Ingredients:
1/2 cup coarsely chopped double chocolate chip cookies divided
2 cups latte or coffee ice cream, softened
1/4 cup frozen whipped topping, thawed
Coffee beans (optional)
Instructions:
Place 4 (8-ounce) parfait glasses in freezer, and freeze 10 minutes. Spoon 1 tablespoon cookie crumbs into each glass; top with 1/4 cup ice cream, 1 tablespoon fudge sauce, 1 tablespoon cookie crumbs, and 1/4 cup ice cream. Freeze 2 hours or until firm. Top each parfait with 1 tablespoon whipped topping. Garnish with coffee beans, if desired. Serve immediately.
Fudge Sauce
Ingredients:
1/2 cup sugar
1/4 cup unsweetened cocoa
1 tablespoon cornstarch
1/3 cup water
1 teaspoon vanilla extract
Instructions:
Combine first 3 ingredients in a medium saucepan; stir well with a whisk. Stir in water. Bring to a boil over medium heat; cook 1 minute. Remove from heat; stir in vanilla. Spoon into an airtight container; chill.
Chocolate Covered Cherries
Ingredients:
1 pound powdered sugar
1/3 cup light corn syrup
1 tsp vanilla
1/2 bar paraffin
1 package (16 oz) semi-sweet chocolate chips
1/2 cup margarine
2 jars maraschino cherries
bourbon, optional
Instructions:
Soak cherries in bourbon overnight or all day (optional). Mix together the syrup, vanilla, powdered sugar, and margarine until smooth. Chill.
Drain cherries. Wrap chilled fondant mixture around cherries. (Roll fondant piece into ball, flatten, then place cherry in center and wrap around and smooth out.) Put on buttered pan and chill.
Melt paraffin with chocolate chips and dip fondant covered cherries in chocolate. Put on buttered pan. Chill thoroughly. Keep in refrigerator until ready to serve.

Use tart apples such as Winesap, Jonathan or Rome Beauty, if available. Cut
cylindrical core from apples and place apples in a pan. In the core hole of
each apple, place sugar, raisins and cinnamon. Place pan in oven: cover and
bake about 30 minutes
Garbage Snack (AKA-White Trash)
Ingredients:
1/2 stick unsalted butter
1 12 ounce package chocolate chips
1 cup smooth peanut butter
1 12 ounce box Golden Graham cereal
1 box golden raisins
3 cups roasted, salted peanuts
1 box powdered sugar
Instructions:
In a large saucepan, melt butter, chocolate chips and peanut butter together. Fold in the cereal, raisins and peanuts to coat. Pour the box of powdered sugar over the mixture and with a fork in each hand, stir gently to coat with the sugar. (I use a large bowl, just dump everything into the bowl and it is much easier to coat with the powdered sugar). Cool and store in airtight containers.
